Handmade, unpasteurized sheep's milk cheese comes from the Spanish Pyrenees. Idiazabal is naturally smoked with a hard, but edible, orange-brown rind. Idiazabal has a perfumey bouquet, and rich, buttery flavor. It remains one of Spain's greatest cheeses.
